This week Hubby will be out of town so most of my meal planning will revolve around stuff that the kids like. It just makes things a lot easier. And honestly, I'm all about easy.
Monday — Breakfast for dinner, probably Farmer's Breakfast. I say probably because I'm not 100 percent sure I have bacon. If I don't, we'll still have fried potatoes, eggs, and either some pancakes or buttermilk biscuits. I'm hungry now just typing it!
Tuesday — Tacos with homemade taco seasoning, one of my kids' top favorite meals. I think top favorite is probably redundant, but necessary to illustrate the importance of this meal to my kids.
Wednesday — Taco Salad made with the leftover taco meat, always in the plan!
Thursday — Country-Style Pork Loin, another one of my kids' favorite meals. Hubby will be jealous when he reads this, because it's one of his favorites too.
Friday — Leftovers, since there is usually some of the pork loin left.
Saturday — Roast in the crock pot. I will brown it in olive oil, put it in my crock pot, sprinkle it generously with salt and pepper (I use a spoon to press it in a little), and then pour four cups of beef broth over it. I cook it on low all day and it turns out moist and yummy. A couple of hours before it's time to eat I put a bag of baby carrots and some cut up potatoes in the broth to cook along with it. When they are good and tender it is time for dinner.
Sunday — Eat out since we ate in all week!

Yum...I love breakfast for supper! We had waffles and sausage the other week...so good!
I need to look up your taco seasoning recipe! When I'm in the mood to make tacos, sometimes I don't because I don't have that little grocery packet!

Now I'm wishing I had bought that chuck roast on Saturday. Well it's too late for me to run to the store.

I always enjoy your Monday menu posting. I copied the pork roast. I have another that I like but this one might be simpler for everyday than the other. I'm thinking of doing one on Monday for dinner since my son's family will be here and Honey Bear is taking off work. It might take two but my crockpot is large.
