
So about 4:30 before we left the house I peeled and cut up my potatoes, and to keep them from getting brown I put them in a bowl of cold water. Then I put them in the refrigerator until I got home. They were there for about three hours. Here is what the bowl looked like as soon as I got home and took it out of the fridge:

My mom used to peel potatoes the night before and keep them like that. They will even keep 2 days, if you change the water in between.
I've done them like that for a short while, but not for that long. Thanks! It's a good thing to know.
Wow...what a great trip! That would be wonderful for mashed potatoes, too! It's true that the potatos can hold up dinner!
